While I'm waiting a bit before I get an iPhone, I did want to get 7.3 installed. And when I did, my Cover Art also began to disappear, and those disappearing were definitely non-iTunes purchased tracks, which in my case the tracks are mostly AIFF formats. Moreover, I could not re-paste Album Covers back into those same tracks. So 7.3 does have a bug regarding Cover Art.
As an aside and since Cover Flow, for me, will be an important aesthetic to enjoying iTunes on an iPhone, I will not get an iPhone until 7.3 is sorted out. ...I don't want to hassle with my iTunes Cover Art and an iPhone through some software updates. So, I prefer to wait until this software bug is eliminated. (I hope Apple is aware of this bug, by now. There's a thread on this topic at the Mac iTunes Discussion. I don't know if this issue extends to Windows 7.3.)
I was able to revert back to iTunes 7.2 (from a backup) and all my Cover Art was reintroduced back into my viewing of the non-iTunes purchased tracks. So, 7.3 does not delete those Album covers, but for some reason will not show or allow paste. Once reversion back to 7.2 was completed, my iTunes Cover Flow was just as it had been prior to installing 7.3.

Note: If one is already working with an iPhone, do NOT revert back to 7.2 as the iPhone REQUIRES 7.3. In this situation, you'll simply have to await an iTunes update that fixes this album cover issue for AIFF tracks.
In order to revert back to 7.2, and get Software Update to recognize the last install was 7.2, I had to replace 2 files from a Backup, in addition to replacing 7.3 with 7.2.
[If you don't have a B/U from prior to installing 7.3, I found that one can proceed, but Software Update will think you have 7.3. ...I wanted to get SU in correct sync with my installed iTunes 7.2.]
To replace the 7.3 app with 7.2, I did a simple drag & drop of 7.2 into my Applications folder (this effectively reintroduced 7.2 and simultaneously deleted 7.3).
Then, I proceeded to replace the following files -
The 2 needed, replacement files were in my Backup in the Upper Level System Folder (not the User-level System Folder), each respectively in sub-Folders, Receipts and Logs. You will need to copy these files from your Backup and paste them into the same respective sub-Folders of your Startup disk.
(1) In the Receipts Folder, replace the iTunesX.pkg (v 7.3) with the same file from 7.2.
(2) In the Log File, replace the SoftwareUpdate.log.0 file with the same file from prior to install of 7.3. Note: This file is only identified by its name and comparative modification date when compared to the file that resulted when 7.3 was installed.
Once completed, I did a Log Out. I was then able to bring up Software Update, and it advised the 7.3 is available. (Of course, I just did a Quit, but this confirmed that my Mac is recognizing the use of 7.2 and not aware of 7.3 having ever been there.)
Then when I activated iTunes and clicked on the tracks where the Cover Art had disappeared, those Covers were back and viewable. I've been using iTunes 7.2 ever since without any issues. /forums/ubbthreads/images/graemlins/smile.gif
