There is already a solution for iPhone Exchange access: PCNow. It's primarily a PC-to-PC remote-access tool (no Mac support yet), but it offers iPhone users (actually any phone with a Web browser) remote realtime access to a PC's Outlook email: messages, calendar, etc. I've seen it on an iPhone and it works well...not beautiful but definitely functional. It also lets iPhone users make calls via Skype if Skype's installed on the remote PC.
