Best Apple product = iPod touch (remember, not everyone who reads Macworld lives in the US and can get an iPhone!)
Best third-party hardware: Elgato EyeTV 250 Plus (who needs a TV any more?)
Best third-party software: Adobe Photoshop CS3 (can't live without it!)
Best Mac Gem: VisualHub (Wow! If only all apps worked this well and were this easy to use)
Suggestion for a new category...
Best open-source software: NeoOffice (it may not be 100% MS-office compatible, but it's free and getting better all the time)

iTouch - An iPhone unburdened by AT&T.
Third-Party Hardware of the Year:
IncipioBud - USB adapter for the 2 Gen Apple iPod Shuffle - Tiny USB adapter is so much more convenient then the USB adapter Apple ships.
Third-Party Software of the Year:
Omnigraffle - Imagine if M$ Visio was good and usable and updated this century.
Mac Gem of the Year:
VisualHub - Video converter makes my life easy and is faster than QT Pro (Which should be free, dammit!)

I never see this product reviewed, but after LaunchBar it's the second utility I install on any Mac. Compact, colorful, and incredibly informative, I wouldn't know what my system is doing half the time without it.

Third Party Software: Notebook
It is a unique piece of software (and only for the Mac), that enables one to perform a host of tasks that would be otherwise difficult or impossible. As an organizer, collector of ideas, synthesizer/harmonizer of thought, it has no peer.
Third Party Software: Synk. A more ubiquitous utility, back-up software, but its simple interface and its support team make it stand out from the pack.
Third party Hardware: Logitech Harmony series of remote controllers. Finally someone figured out that we all have developed these complex A/V systems that frustrate or mystify our families and households, and decided to do something about it, but using the 'net and our PCs.
