Jailbreaking 1.1.2 and File Syncing

I'm thinking about Jailbreaking again because I would like to be able to carry certain files with me on my iPhone, instead of having to carry around a laptop. So here's the question, say I have a folder on the iPhone with an Excel spreadsheet, can my iPhone read it (actually open it so I can see it), or does it just store it there? What about a text document? Anyone have some experience with this?
