I did an archive and install of Leopard. Then Final Cut Pro and Final Cut Express are asking me to provide serial numbers and register again. I assume that this info is somewhere in the previous system folder. What do I need to move and where is it?

In most cases doing an A&I plus check preserve network and user settings the SNs are saved. Anyway, you should be able to find the Preferences in the Previous System Folder and swap them with the newly created prefs in your user account. The clue will have the name of the program, ie. 'com.apple.finalcutexpress.plist.
Also the SNs are on the original paper wrapper they came in if you have them. And if you did indeed register your software Apple might have them on hand for you to snag by contacting them: http://www.apple.com/support/contact/
