The best way I can think of doing it is WireTap.
WireTap's free software that'll record any audio playing on your Mac. I can't think of any way to directly capture the stream from iTunes, but this'll do the job. Just make sure you turn the alert volume on your computer down when doing the recording -- any sounds your Mac makes are included in the recording.
