Are you looking for an all in one service management system? IE inventory, dispatch, billing, contract mgmt etc?
If so you may have a hard time finding one, I have not heard of one that runs on MAC - it would be cool if there is one.
However there are some interesting alternatives.

Sourceforge is a great resource for web based solutions that can run on a Mac using the apache web server, PHP and mysql softwares - all freely available and run fine on a MAC - maybe a bit of a learning curve unless your are already comfortable with these applications - On the plus side they are platform independent and free - your users can access these apps from any software as long as they have a browser and an internet connection.
I use iCal for dispatching over 50 technicians - its free!- however it only tracks the appointments - not logistics and invoicing.
Perhaps iWork / Ibiz may be of interest - no inventory tracking, but may be of interest
