Spell check in OS X

Is there a way of changing the OS X spell check dictionary, or turn it off?

I use SpellCatcher and it allows me to exclude some applications. It works very well in Entourage, Word, and Safari (especilly in the Forums) and iChat. I highly recommend it.

I also use SpellCatcher, but the poster wants NO help, especially the builtin OSX spell checker. ..which brought up a good question by -Jim. Which program to disable it in. Anyway, some programs like TextEdit, and some others you can go to Preferences, in the menu, and turn that sucker OFF. I know spellcheckers can look/ack ugly like in TextEdit with that squiggle red line under the text. In my case every word it seems like
