You can do this entirely with the Finder's built in features. First, make an alias of the folder you want to place in the dock. Click on the folder alias and choose Get Info from the File menu. Click on the folder icon in the Get Info window and then Paste the new icon you want to use (this presumes that you have a Copy of the new icon in the clipboard.) Finally, drag the folder alias (which should now have a new icon) into the dock.
