I have the same issue, very annoying indeed... especially since I have a ton of photos on an aging G5 which takes some for iphoto to boot. The only way to stop it is to go into the iPhoto prefs and change the "connecting camera opens" option to "no application". Though this isn't a great workaround as now when you plug in your real camera nothing will happen!
I just gave up and now just keep my iPhone dock plugged into a wall outlet and only do a sync every week or so.
