I use Apple Mail in combination with SpamSieve .. http://c-command.com/spamsieve/ .. and am extremely happy.
Thanks -- does Mail allow you to color-code messages?
I tried SpamSieve once. I went through the set-up very carefully but couldn't get it to work. When I contacted tech support, I received a very rude email in reply that basically implied I was an idiot and that I should just give it up. I did -- and vowed never to use it again.

Yes .. you can set the color of a message .. and use a Rule to automatically do it.
To be honest, I thought SpamSieve to be one of the easiest apps/utils I have ever used. Basically no set up at all - at least with Apple Mail. Maybe you tried a very early version. I would defintely give it another shot.
