Outlook, iPod Touch and the sync issue

I am wondering if anyone else is in this situation:

I have a Mac Mini at home running the latest version of OS X. I have my music library on itunes on this machine only.

I have a PC at work which runs WIndows Vista and uses Outlook. It has the SP3 version of MS Office.

I just got an iPod Touch for X-mas and I want to sync the Calendar and Contacts in Outlook to my touch. I don't want to sync anything else from this machine. This is so I can replace my Palm Tungsten E and carry around one less piece of electronica in my purse.

I have read up on this, and visited the genius bar (x2) to get this sync to work (manually syncing the PC by checking only sync the calendar and contacts). It fails to sync each time. Moreover, everytime I hook my touch up to to the PC, it warns me that I can only sync the one machine. (Since I am not syncing my music library, apps, movies or podcasts to the PC, this message should not be appearing) The genius was stumped.

Surely I am not the only Mac user in a PC world that has this issue? I seem to have the correct version of MS Office, the most up to date version of itunes loaded on the PC, etc. Why can't I sync my calendar and contacts. Why do I get the "outlook sync failure" message every time? What am I doing wrong (if anything). BTW, I can't go to the IT people at work about this, as the ipod is not a supported device with my company.
